Ingredients:

1 pound lean ground beef or 1 pound chicken, cooked and shredded

1/2 cup onion, chopped

1 clove garlic, chopped

black pepper and ground cumin to taste

12 corn tortillas

corn oil for frying

1 can commercial enchilada sauce (Old El Paso brand, if available)

grated cheese (optional)

sour cream (optional)

sliced black olives (optional)

Directions:

  1. Brown meat, then add onion, garlic, cumin, and pepper.
  2. Fry tortillas in hot corn oil.
  3. Dip each tortilla in enchilada sauce, fill with meat mixture, and roll up.
  4. Place enchiladas in large, shallow pan and heat through.
  5. Serve with grated cheese, sour cream, and sliced black olives.
